- Water

- Double boiler or steamer basket
- Bowl
- Whisk or chopsticks
- Ramekins
- Oven mitt
- Silky smooth mixed eggs
Directions
- Set up double boiler or steamer basket
- Bring water to a simmer
- Crack eggs in a bowl and mix with whisk or chopsticks
- Add water in a 3:2 ratio and mix
- Put eggs in ramekins or small heat safe bowls
- Place bowls in pan or basket and cook covered for 15 minutes
- Carefully remove ramekins or bowls with oven mitt
- Serve
